For AI in HR, pick a general HR course and check that it covers data protection before you use AI on staff data. We can't list a course from a UK HR professional body yet.
If you only do one, take AI Applications in People Management from Wharton: about 10 hours, built around HR decisions, and it covers bias in algorithmic decisions. It's free to learn; the certificate is paid. For a fuller certificate, AIHR's Artificial Intelligence for HR Certificate Program is about 33 hours and paid.

Look for courses built on HR work such as job adverts, policies and employee letters, and check that they cover personal data. CPD from a professional body counts towards your development record.
Most courses on this page teach general AI assistants. Before you use one with staff or candidate data, check how the tool handles personal data: UK GDPR applies to it as to any other system.
The Information Commissioner's Office publishes Guidance on AI and data protection. The ICO notes: "Due to changes made by the Data (Use and Access) Act, this guidance is under review and may be subject to change." Check the page for its current status before relying on it.
